Some of the most common markings include a 950, which indicates it is a Brittania silver made of 95% silver. It exceeds the sterling requirement but has a softer feel than typical sterling.

If your piece has a 925 marking, it is the standard for sterling silver. This requires the piece to be at least 92.5% silver.

If you spot the number 900, it indicates that it is 90% silver, which therefore disqualifies it from being sterling silver.

With the holidays just wrapped up, you have a pretty good idea of the condition of your best cookware, flatware, silverware, china, and serveware. As long as those needs are fresh in your mind, it is a good time to consider what items in your kitchen and dining room need to be replaced this year.

In addition to being one of the last things you consider replacing, the very term “silverware” has most people lost in confusion. True heirloom silverware may never need to be replaced with proper care and storage, but other flatware will eventually wear out or break and need to be replaced.

Most people consider all sets of dinner knives, spoons, and forks to be silverware, but flatware can be made of plastics, stainless steel, or other metals. Cheaper flatware sets are easy to let go of, but if you have a silver or silver-plated silverware set, consider taking it to a silversmith for possible repair before you let go of the set in favor of new.

Look for these signs that your flatware or silverware needs to be refurbished or replaced.

Rusting and pitting

Sterling silverware won’t rust, but the acids in your sink or dishwasher can eat away at the surface, pitting the finish. You might be able to get a silversmith to refurbish the silverware for you, but if the damage is significant the set will need to be replaced.

Rusting usually happens with stainless steel flatware when it is left to sit in water in the sink or dishwasher. It only stands to reason that when metal is submerged in water, rusting, pitting, or discoloration is bound to happen.

History

Yamazaki’s fascinating story began in 1918 in Tsubame, Japan, a coastal plains city about 200 miles northwest of Tokyo.

The Long, Colorful History of Mepra

The brand has officially been around since 1947, but the three Prandelli brothers, Bortolo, Giovanbattista and Francesco, started the family business in Lumezzane, Italy, in 1898. They built their first metalworks factory in 1901. After World War II, Giovanbattista gave his three sons control of a new company called Mepra.

Pietro, Giacomo and Felice built a modern plant and took advantage of the raw aluminum and brass that were in abundance after the war. Three years later, they decided to switch to stainless steel. That decision has been paying off ever since.

As the company grew, the brothers branched into hollowware, kitchenware and silver plate production. Pietro’s son Gianno joined the business in 1972 and eventually served as both CEO and president. Luigi, Felice’s son, took over marketing and accounting in 1985. He later became CEO as well.

The company thrived through the 1980s. Luigi is credited with launching a number of versatile products and collections. The family started incorporating wood, glass, porcelain and other materials into their designs. The result was a diverse, innovative assortment of products that are still popular today. A plant dedicated solely to plastic goods opened in 1992.

To cater to the tastes of increasingly refined customers, Mepra began collaborating with well-known, cutting-edge designers like Angelo Mangiarotti, an award-winning architect and urban planner. Many of those talented newcomers still create designs for Mepra.

Sherrill Manufacturing, known for Liberty Tabletop products, has an admirable and increasingly unique claim to fame: it is the only remaining flatware manufacturer in the U.S.

Even the quality stainless steel it uses is made right here in America. Sherrill tests for lead and other toxic trace elements. There are no shortcuts in the making of safe, durable products. Not only that, but high-grade stainless steel retains its appealing luster and resists staining for generations.

Sherrill Manufacturing has been at this for more than 100 years and is frequently lauded by the media. The New York Times, ABC, and NBC are just a few outlets that have featured the company. Since other American industries are disappearing in droves — according to The Times, there’s only one whistle maker, one barber pole manufacturer and a handful of sneaker factories left — Sherrill’s longevity is impressive.

New Beginnings

There were some close calls. Sherrill was initially an exclusive manufacturer for Oneida. Like many companies, Oneida found it impossible to compete with brands that were using inferior materials and outsourcing labor to keep costs down. It went bankrupt in 2006 before merging with other brands. Meanwhile, Sherrill had to come up with solutions.

Production shut down for two years as the company reorganized. Before it did, however, the forward-thinking owners used all the steel they had left to create their own patterns. Those designs became the Liberty Tabletop collection. They built a website that generated $23,000 in sales in the first year. By 2015, sales were close to $1 million. The customer base expanded largely through word of mouth. The U.S. military, which orders Liberty Tabletop utensils for bases around the globe, has helped sustain Sherrill through the years.

Even in tough times, Sherrill won’t compromise. They’re looking for customers who don’t mind paying a little more for domestically made goods. Sherrill’s steel comes from Ohio. Polishing compounds hail from Detroit and Pittsburgh. A family-run paper company in Earlville, New York manufactures all of Sherrill’s boxes. The paper outfit has been in business since 1926.

A Beginners Guide To Seafood Cutlery

Seafood utensils, some of the most misunderstood pieces of flatware, emerged during this time. Most are lovely and unusual, but a few are downright intimidating. Guests often wait nervously until a savvier dinner companion leads the way.

Consider escargot tongs. The French are mad about snails and consume around 40,000 metric tons of them every year. Snails have received a much cooler reception in the U.S. Whether that is due to deep-seated loathing or general confusion about how to use the tongs is anybody’s guess, but it has made for some outstanding comedy.

Lucy Ricardo of the TV classic “I Love Lucy” decided that escargot tongs were provided as a kindness for coping with the fishy smell. In one of Lucille Ball’s funniest moments, she gratefully clamped the tongs onto her nose.

Julia Roberts’ character in “Pretty Woman” successfully used the tongs to grab a snail, but the “slippery little sucker,” as she put it, shot halfway across the formal dining room.

Common Seafood Utensils

Some of the most succulent tidbits just can’t be accessed without a seafood fork. Fish knives ensure that fish easily falls free from the skin so that not a bite is wasted. Serving pieces are designed to keep the fish intact on the journey from the serving dish to the dinner plate.

Seafood cutlery goes under a wide variety of names, but here are some of the most common pieces:

Fish fork – It is typically smaller than a dinner fork, has fewer tines and has an inwardly curving shape to distinguish it from a dinner fork.

Fish knife – This piece is smaller than a steak or butter knife. It has a sharp, broad, curving blade for separating skin from flesh. The width also helps each flaky bite onto the fork. The top of the blade has a razor-sharp point for removing even the tiniest bones.

Cocktail, seafood, shellfish and snail forks – These dainty, long-handled forks go under a variety of names and are often used interchangeably. They spear shrimp, dig deep into the tight crevices of crab legs or easily remove just about any other meat from shellfish. They usually have two to three short tines to keep delicate meat intact.

Oyster fork – This fork is shorter and usually has one long, thin tine that divides into two hooks. It may also have a straight center tine with two hooked tines on either side.

Gumbo spoon – The gumbo spoon holds bragging rights as the biggest soup spoon of all. The deep bowl is for catching every bite of those savory meats and vegetables.

The utensils are placed according to order of use starting from far left and far right and progressing toward the plate at the center. If a fish course is first, put the fork on the outer left and the knife on the outer right. For seafood entrees, put them where the ordinary fork and knife would go.

Interestingly, the oyster fork always goes on the outer right. It is the only fork of any kind that belongs to the right of the plate.
