In stainless flatware, knives are made in two different styles. In many of the lesser-priced stainless sets, the knives are stamped out of one flat piece of steel. One example of this style is Flight by Oneida.
The other method is to insert a stainless blade into a hollow steel handle, and secure it with a strong epoxy. The more expensive stainless steel flatware sets use this method. It is often the preferred knife style, since it is more rounded, and fits in the palm easier. Most of the stainless available here is made with a hollow handle knife.
